Because breakfast is why I get out of bed in the morning...

Nummy things to do with a carton of eggbeaters egg-whites, a microwave, and some kind of protein:

1. McMuffinish a la Adella: I put one morningstar sausage patty in one of my six ounceish glass side dish then pour about half a cup of egg whites over it. Throw that in the microwave for about three minutes (which results in a perfect circle of egg white surrounding a fake sausage yolk), while toasting a piece of whole wheat bread. Smear some hummus on the bread, take the egg and sausage combo and throw it on top of the toast and hummus. Serve with coffee and some fruit!

2. Eggs and Tofu: Almost identical concept. Mash up some hard tofu in a glass side dish, mix it with the egg-whites, some turmeric, minced garlic, cayenne pepper, and chili powder and throw in the microwave for about two minutes. Toast the bread. Spread peanut or almond butter on the toast and do not put the eggs and tofu on the toast and nutbutter. Serve with coffee and fruit.

Naturally there are permissable variations on this, including substituting chunks of almond cheese for the tofu or the faux-sausage patties and adding salsa instead of hummus, a tortilla instead of bread, maybe using leftover beans or chili if the tofu/almond cheese/faux sausage doesn't work out.
